Although I’m from NYC, I spent some of my childhood in the South. Key Lime Pie is a favorite of many there. I found a way to make it where it’s lower in fat and has fewer calories (but still tastes amazing), and it’s super easy and quick to make. Plus, it’s super refreshing when it’s hot outside. Enjoy!
Erika Icon’s Key Lime Pie
Makes 8 servings.
Ingredients
1 box (0.3 oz) of sugar-free lime-flavor Jell-O (or similar) gelatin
¼ cup boiling water
3 containers (6 oz. each) of Yoplait (or similar) key-lime pie-flavor light or regular yogurt
1 container (8 oz) of Cool Whip (or similar) light or regular whipped topping thawed
Kiebler (or similar) 9” reduced-fat or regular graham cracker pie crust

Instructions
Dissolve the gelatin in the boiling water in a large heat-resistant bowl (ceramic or glass). With a wire whisk, stir in the yogurt. Then, use a wooden spoon to fold in the whipped topping. All the ingredients should be mixed together evenly.
Transfer mixture to pie crust and refrigerate overnight (preferably) or for at least two hours.
Optional: garnish with fresh mint, whipped cream, and/or slices of lime.
